Roasted Pumpkin and Walnut Salad with Goat Cheese

Ingredients:

  • 300g pumpkin, cut into cubes
  • 100g walnuts
  • 100g soft goat cheese
  • A handful of spinach or rocket (arugula)
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
